Ginger Nut Biscuits with Cream Recipe
Ginger nut biscuits are a classic treat that are easy to make and enjoy with a cup of tea or coffee. They’re also great for sharing with family and friends. This recipe makes a delicious batch of ginger nut biscuits with a creamy filling that will be sure to impress.
Ingredients
For the biscuits:
- 1 cup (125g) plain flour
- ½ cup (75g) caster sugar
- ¼ teaspoon baking powder
- ¼ teaspoon ground ginger
- ¼ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ¼ teaspoon ground cloves
- ½ cup (125g) butter, melted
- 2 tablespoons golden syrup
For the filling:
- 2 tablespoons butter, softened
- ¼ cup (60g) icing sugar
- 1 tablespoon cream
- 1 teaspoon ground ginger
- ½ teaspoon ground cinnamon
Instructions
1. Preheat the oven to 190°C (375°F) and line a baking tray with baking paper.
2. In a bowl, combine the flour, caster sugar, baking powder, ground ginger, cinnamon, nutmeg and cloves.
3. In a separate bowl, mix together the melted butter and golden syrup.
4. Add the butter mixture to the dry ingredients and mix until a dough forms.
5. Roll the dough out onto a floured surface to a thickness of about 5mm (⅛ inch). Cut out circles with a cookie cutter and place on the baking tray.
6. Bake for 10–12 minutes, until golden brown. Leave to cool on the baking tray for 5 minutes before transferring to a wire rack to cool completely.
7. To make the filling, beat the butter, icing sugar, cream, ground ginger and cinnamon in a bowl until light and fluffy.
8. Spread the filling onto the flat side of half of the biscuits, then top with the remaining biscuits to form sandwiches.
